I thought I’d post a little recipe inspired by our greek travels haha! Greek food is one of my top cuisines – it just feels so healthy and fresh to eat, in comparison to a lot of cuisines. It’s just such a shame there aren’t that many greek cookery books around. I absolutely love this recipe as it’s super quick and simple to throw together after work, and tastes pretty good too! I served mine rolled up in a wrap with tzatziki and plenty of greek salad to finish it off!
500g lamb mince
½ white onion, finely chopped
1 garlic clove, finely chopped,
handfull chopped parsley
½ tsp dried oregano
50g crumbled feta
1 medium egg
tzatziki, recipe here
greek salad: 1 red onion, 1 beef tomato, handful cherry tomatoes, 1 green pepper, handful crumbled feta, ½ tsp dried oregano, extra virgin olive oil, red wine vinegar
1. Preheat oven to 200°C/390°F. In a large bowl, mix together all of the main ingredients, excluding the tzatziki, salad and pitta. Chill in the fridge for around 30mins-1hour, then shape into long thin sausage shapes.
2. Fry in a large pan until golden, then transfer to an oven dish and bake in the oven till cooked through – roughly 15-20mins.
3. While the koftas are cooking, prepare the greek salad by chopping all the veg and combining in a large bowl, drizzle with extra virgin olive oil and a tiny bit of red wine vinegar.
4. When the kofta are cooked, serve with the greek salad, tzatziki and pittas/wraps and enjoy!
