This is one of the most amazing breakfasts I’ve had in a long while. I’m not going to post a complete ‘recipe’ of it as it’s a pretty simple thing to make, but I just wanted to share this little creation. If you don’t already follow Lauren’s healthy eating account on instagram (@eating_whole), then you should (she also has a blog too)! She always posts such colourful and tasty looking recipes. I adapted this recipe a little by adding a boiled egg. It was amazing!
All you need is a slice of buttered (or non buttered if that’s what you prefer) toast spread with a fine layer of honey, topped with sliced/mashed avocado, a boiled egg and then topped with a sprinkle of freshly ground black pepper and a little salt. I served mine with some fresh fruit and a lovely cup of tea in my new favourite mug.
