Our Perfect Anitpasti Platter

May 31, 2015

Antipasti 2 Antipasti 3 Antipasti 5 Antipasti 6 Antipasti 1It’s no secret how much I love Italian food and some days, Shane and I just really fancy a nice antipasti platter full of salami, olives, cheese and bread. We just pig out with a massive plate watching a movie – kind of our monthly weekend tradition haha! I thought I’d share our favourite things to include in our platter.

Salami – we usually get a selection of salamis, mostly Italian ones, but it usually depends on what is in the selection that we choose. This one included a chorizo one, a typical italian salami and a milano salami. We sometimes get some proscuitto too, though I much prefer a salami selection.
Cheese – a good chunk of sliced mozzarella is always a must. It’s so creamy against the nice salty salami.
Olives – My absolute favourite olives are nocellara olives, but anything covered in garlic is good for me haha! A nice selection is usually best. We usually get some cream cheese stuffed peppers too – they add a nice little bit of spicy tang.
Bread – Sometimes we get a baguettte, but this time we decided to go for a mediteranean panini and slice it up. It’s so nice dipped in some extra virgin olive oil and balsamic vinegar!
Salad – you can’t have an antipasti platter without a good bit of fiery rocket and tomato dressed with a little extra virgin olive oil and balsamic vinegar, topped with some grated parmesan.

I love making little ‘sandwiches’ of tasty salami stuffed with mozarella, tomatoes and salad, then dipping the bread in the oil mix. So good! We really need to get some friends together and just sit and eat some good food! It’s so great for sharing and at least if someone doesn’t like a particular thing, they can just leave it. What are your favourite things to include in a little sharing platter? You can find our perfect cheeseboard here too!
