With pancake day coming up this week, I thought it’d be the perfect time to share my favourite recipe for fluffy american style vegan pancakes. I know pancake day is usually full of crepe like pancakes filled with lemon and sugar, but I’m just not a fan and much prefer a fluffy american style pancake. You can do so much more with them, in my opinion.

So these ones are super simple and you don’t really need that many ingredients to make them, most of which you’d probably have on hand in your kitchen anyway. If you want to make them gluten-free, you can always swap out the oats for gluten-free oats and a nut based milk instead.

What You’ll Need:

(makes 8 small pancakes)
1 medium ripe banana
2 cups oats
1.5-2 cups oat milk (or other plant based milk)
1 tbsp flax seed

How To Make Them:

1. Start by adding all of the ingredients to a blender and blend on high speed for 1-2 minutes until the mixture is combined and smooth. I’d start out with the 1.5 cups and see how it turns out, but you might need to add a little bit more milk, especially the longer the mixture sits. So just adjust as needed.

2. Let is rest for a good 5 minutes while you prepare any toppings.

3. Heat a large pan on medium heat and add your oil of preference – I used coconut oil, then pour in enough batter for each pancake and cook on each side for 5-6 minutes. You might need to adjust the heat a little if they start to burn.

4. Once the pancakes are done, stack them and top with any toppings you want!

These were SO good. I also added a little bit of cacao powder to the end of the mix to try out some chocolate flavoured ones, but they didn’t turn out so great (I don’t think I added enough cacao powder, but they also needed a bit of sugar to make up for the bitter cacao). I think these pancakes work best with a load of different toppings rather than just with maple syrup as they do get a bit samey after a while.

I served mine with loads of vegan coconut yogurt, raspberry jam (or you could make a raspberry sauce), a dolop of peanut butter, maple syrup and some frozen blueberries and they were SO good! They’re not too sweet either, as the only sugar in them is the natural sugar in the banana, though I totally just piled on jam + maple syrup haha!

    Yummm these look amazing! I use a similar recipe too (without the flax seeds) and I can’t believe how easy it is to do! I almost always have all the ingredients, too, so can whip up a stack whenever I get the craving! x
