A while back, I shared 4 DIY’s that I wanted to try, and I’m going to be honest here and say that the post that I had planned for today was a complete fail, so this is the next best thing! If you follow me on twitter, you might have read that the recipe I was using (I was making mozzarella) required me to do fractions to make it with the amount of ingredients that I had, which I’m terrible at fractions. The mozzarella failed, and it was a complete disaster. So, here’s a bit of a filler post of 4 recipes that I want to try.
Courgetti Carbonara
Last month, I shared my adventures in spiralizing, starting with bolognese. I was so nervous to try courgetti, because I don’t particularly like courgettes, but I actually preferred it to pasta! Well, I want to try some more recipes, and came across this courgetti carbonara (which is like my second favourite pasta dish!). I know it uses actual pasta, but I’d swap that our for courgetti instead.
Mango & Coconut Chia Pudding
I’ve only ever used chia seeds in smoothies before or as a topping on some porridge, never as an entire pudding. Well this is absolutely amazing (once you get over the actual look of the chia seeds). I actually made it for some of the girls at work yesterday who had never heard of chia before, and they loved it! It took me a while to get over the inital weird texture of the chia, but seriously, try this – the mango and coconut go so well!
Cajun Shrimp & Grits
So, I’m still on my Masterchef US binge, and obviously, they cook all the ‘american’ foods. I’ve been obsessed with shrimp and grits since I first heard about it years ago, but I’ve still never made it. This is actually on the menu for this weeks dinner plan, so we’ll see how it goes!
Honey Lime Tequila Tacos
So this is kind of another cheat one – I had it for dinner last night! It’s been sitting in my pinterest board for so long and I keep wanting to make it, but never end up doing it. I made some fish tacos back in the spring that I loved, and wanted to try out some shrimp ones. These were amazing! I left out the tequila though, as we don’t have any and I wasn’t about to buy a bottle for 3 tacos, but it was still amazing, and actually really filling too!
What are some recipes that you’ve been wanting to try lately? I’m always looking to expand my growing pinterest board with ideas!

August 25, 2016 at 9:46 pmNo-one that I work with had heard of them, but I’m so glad they enjoyed the pudding! The texture is definitely something to get used to, so I’d suggest maybe try them in a smoothie first. They’re pretty tasteless, so it’s mainly just the texture!
