I’ve been wanting to cut down on my meat/fish consumption for the past few months and although I don’t think I could go vegan anytime soon, I am trying to eat less meat. I definitely couldn’t just cut it out overnight like some people do, but I do want to slowly incorporate more vegetarian and vegan recipes into my diet and slowly make the switch – it’s better than nothing right?!
I found some amazing looking vegan recipes that are things that I would totally eat anyway. I think that’s the way to go for me – switching out non vegan meals, to things that are vegan and all of these recipes are pretty much my all time favourite foods (except bolognese isn’t on there), so I really want to try make these vegan versions.
These gyros contain Jackfruit, which is a type of fruit grown in Asia. If it’s picked before it’s ripe, it has a more savoury flavour and can be used to imitate things like pulled pork and shredded chicken with flavourings. The good thing about this recipe is that it uses all store cupboard essentials, so you don’t even have to go out and buy a whole load of stuff to make it!
Jaffa Cakes are my favourite snack! I just love the combination of chocolate and orange together, and while I’ve never made ‘proper’ jaffa cakes, these vegan ones also look really easy to make (and so so easy to snack on too).
I’ve been following Mama Eats Plants on instagram for the past month or so, and I love watching her instagram stories so much. She made this cake a few weeks ago, and although I’m not usually a cake fan, I’ve not stopped thinking about it since. The recipe uses small bundt cake tins, but Amanda used two 9″ cake tins and made it into a cake and it turned out just as well.
Wagamama is one of my favourite restaurants, and I always order the Chicken Katsu Curry, so I’d love to try this vegan version using aubergine instead! It looks so so simple and really tasty too! I’m not sure how Shane would take it though!

March 17, 2018 at 11:08 amOoh, I’ve never actually tried the vegetarian Katsu Curry at Wagamama’s (I’m a sucker for the chicken), though I do think about it every time I go there haha! I definitely need to try it, or make it myself at home!
