Life

I love how my ‘life’ section is usually filled with photos of our cats. I mean, they are like my children, so I guess that’s pretty fair! I’d say 90% of my camera roll is photos of Isla, with the odd few of Keeko in there (she mostly keeps to herself, whereas Isla follows me around everywhere). Sadly, if you didn’t read this blog post, we had to say our last goodbye to Mr back in January. He did so well to live with his heart failure for 3 years (literally to the day).

Also, say hi to Harry, our neighbours cat (the one at the end). He’s befrended me and pops over each time he see’s me outside. I don’t think he gets much attention at home so he likes to come over for some cuddles with me, much to our cats disgust! Also, just look at how much Keeko loves Shane. I walked up the stairs to find her just sitting staring at Shane waiting for him to wake up and cuddle her haha!

I’ve started planng the seeds for the veggie garden and they’re all coming up really well. So far we’ve got tomatoes, cucumbers, aubergines and nasturtiums which all need to grow a bit more and wait until it warms up to head out into the garden, but I’ll be sowing some more seeds in the next couple weeks for things like lettuce. I can’t wait to be back out in the garden again!

Home

I never really take any photos of our house as it’s always such a mess. Between doing a van conversion and living with Shane in general, there’s always something somewhere to tidy up. Does anyone else’s boyfriends just create a trail of mess anywhere they go? I’m hoping to get a blog post about some of my favourite easy to care for houseplants up soon too, as we’ve got SO many plants around the house. I just love greenery so much!

The campervan is coming along really well though! It’s almost finshed other than a few cupboards and doors need to be built and a few adjustments to the bed and then it’s just onto the finishing touches for the decor. I’m excited to head to Camp Quirky in May with a hopefully finished campervan to show off. We’ll see how it goes.

Vegan Lentil Bolognese

Food

I’ve actually been loving cooking so much this year. Usually I’m so inspired to cook during the summer with the doors open and the sun shining through, and then sitting down to a delicious meal outside as the sun is starting to set, but in the winter I just hate it (along with everything else tbf). But I’ve been enjoying cooking some of our faves, and a few new recipes too.

I’ve even managed to share 3 recipes on the blog so far this year which I think is amazing for me as I usually share 3 a year haha! Although the vegan lentil bolognese one won’t be up until the 24th, it’s all written up and scheduled! But you can check out my cauliflower shawarma and the vegan banana oat pancakes I shared. I’m hoping to share at least 1 recipe a month (mostly vegan/veggie) this year.

Malham Cove, Yorkshire

Cape St Vincent Lighthouse

Explore

We’ve been on a few trips so far this year! Two in the campervan – once to Flamborough in Yorkshire and the other to the edge of the Yorkshire Dales (I’ve still got to write my post up about this one). It’s been so nice being able to head away in the van this winter instead of working on it each weekend, though it is delaying the progress a little bit. But at least it’s being used!

We also took a few days to head to Portugal – our fave place to head in the winter. We did want to head down in the van, but we didn’t have enough time and the ferry was extortionate, so we’re heading there over Christmas and New Year instead where we’ll have 2 full weeks to explore Portugal and Spain (and maybe a few stops in France along the way). I can’t wait!

What have you been up to lately?

Poor Harry, not getting enough love at home. Funny how jealous cats are, though – do they not know you’ve got enough love to share with them all? 🙂

We just added four new houseplants this past weekend to our growing collection. In lieu of pets, I suppose we’ve decided to take in plants – we’ve even adopted some from people who’ve gotten tired of taking care of theirs, ha!

What is the cool green plant in the middle of the row? It looks like some kind of succulent, but I’ve never seen one look quite like that. My daughter would love one of those!

I know! I feel so sorry for him so I’m always sure to give him plenty of cuddles when he comes over haha! Houseplants are my fave – we have so many!

The one in the middle is a burro’s tail succulent (Sedum morganianum). It’s literally so easy to care for and it’s had it’s fair share of neglect (hence the bare patches where it shriveled up and the leaves fell off haha. You can just pop any fallen leaves back in the soil and it’ll root itself and grow a new stem).

That is so cool! I’m going to have to find one of these for Lex. She keeps a bunch of different succulents in her room, and I know she’d love how unique this one looks. The colors are extraordinary!

Been loving all your posts and food photos this year <3 Especially loving your Portugal photos!! I've mainly been up to life admin things, doctors appointments, work, and packing/training for my upcoming trip to Nepal. I leave for the UK on Monday and I'm excited but also overwhelmed!
